Food waste recycling is no longer just for the “tree huggers”. The Waste Act specifies source separation so that food waste can be diverted from landfill. Have you ever wondered what happens to food waste when it gets thrown in a dustbin and misses the recycling bin?  The average household wastes about 20kgs of food waste every month. This means that every 2 weeks, 6kg CO2e is released into the atmosphere per household. Add that up in South Africa and you are looking at an estimated 2 million tonnes of CO2e per year. Composting food waste instead of throwing it in a dustbin will cut greenhouse gas (GHG) emissions by 98%. Composting only has a carbon footprint of 10kg CO2e per tonne of food waste. Bokashi is an easy, clean system of getting rid of food waste. All food waste, including cooked food, meat products and dairy is put into the bokashi bucket and layered with bokashi. When the bokashi bucket is full, you leave it for 2 weeks to complete the fermentation process. Add the treated food waste with garden waste to make high quality compost. Bokashi speeds up composting to 7 -10 weeks.

Bokashi is a product that was developed in Japan where landfill is not an option. Recycling food waste becomes easy with bokashi. There are 3 main microbes in the active ingredient of bokashi, EM® (effective microorganisms); yeast, lactic acid bacteria and phototrophic bacteria.  The yeast and lactic acid bacteria are fermentation starters. These microbes stop the food waste from rotting and smelling. The phototrophic microbes are essential to combine nitrogen and carbon in the composting process. Bokashi is a little like making bread. If you have the ingredients and the recipe, anyone can make it. As with bread, there are a few brands available in the market. Test for yourself and see which one works the best.
