Our headquarters. Our basecamp. Our heartbeat. This facility is where we receive carcasses and do the actual butchery. Like, this is where we cut stuff up. As whole-beast butchers, it is our job to break full carcasses down into various primals, sub-primals and secondary cuts and under this roof you’ll find our cold room, our production areas and our smoking machine. In other words, it’s a full-scale working butchery in the heart of Woodstock. We are unapologetic about the fact that meat comes from an animal and, as a result, carcasses are visible through window displays. You can also watch our blockmen working, which means at any given time you might catch them making sausages, brining bacon, pressing hamburger patties, cutting steaks or portioning lamb chops. If there is a speciality cut that you want, or if you’d like to hang out and talk to our butchers for a while, this is the shop to visit. A small retail store is neatly attached to the production facility with a wide range of products. At Woodstock we offer Rosetta pour-over coffee and a simple food menu including our (famous) toasted ham and cheese sandwich.
